Equipment

  • 1 12- Muffin Tin Baking Pan
  • 1 Large Bowl
  • 1 measuring cup 4 Cups or larger
  • 1 Hand Whisk
  • 1 Medium frying pan

Ingredients
  

  • 12 Large Eggs
  • 4 Cups Organic Raw Spinach
  • 1/4 Cup 2% Milk
  • 1/4 Cup Feta Cheese Substitute for Goat Cheese
  • Salt & Pepper
  • Non-Stick Cooking Spray Substitute olive oil to grease the muffin tins.

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease muffin pan with non-stick cooking spray or olive oil.
  • Saute spinach over medium heat until wilted. Spoon into muffin pans.
  • In a large bowl, add eggs, milk, salt and pepper. Whisk until well combined.
  • Add mixture into a large 4 cup measuring cup and pour into 12 muffin tins. You will pour over the cooked spinach.
  • Sprinkle feta cheese on top of the egg mixture in the muffin baking pan.
  • Bake at 350 degrees for 25 minutes or eggs are completely cooked (insert a knife and center comes out clean).
  • You can eat immediately.
  • Allow to completely cool before storing them in the freezer.
  • To reheat, use the microwave to heat for 2-2 1/3 minutes. Enjoy!
