Melt-in-Your-Mouth Strawberry Cookies (So Easy!)

With Valentine’s Day right around the corner, here is a melt-in-your-mouth strawberry cookie (so easy too).

Baking doesn’t have to be complicated! These melt-in-your-mouth strawberry cookies prove that deliciousness can be achieved with minimal effort. They are perfect for a delightful homemade Valentine’s Day gift.

Your family will love them. And, believe me when I say they will disappear fast!

The best part of this recipe is you need only four ingredients and it is super easy to make for your family.

I love the versatility of this recipe. You can substitute other cake mixes such as lemon, orange, or chocolate. They melt in your mouth and go great with a cup of coffee or tea.

  • 1 Large Egg
  • 1 Box of Strawberry Cake Mix
  • 8 oz. Tub of Cool Whip (free-free works also)
  • ½ Cup Powdered Sugar
  • Parchment Paper
  • Valentine’s Candy Sprinkles (Optional)
  • Medium Cookie Spoon
  • Spoon & Fork
  • Mixing Bowls
  • Spatula
  • Cookie Sheet

Preheat oven to 350 degrees Fahrenheit.

Line your cookie sheet with parchment paper.

In a large bowl, add your cake mix, egg, and Cool Whip.

With a spatula, mix by hand until the ingredients are combined. Careful not to over-mix.

Place ½ cup of powdered sugar in a bowl.

With a medium size cookie scoop, grab the dough with the scoop and place it in the powdered sugar.

Use another spoon to toss the powdered sugar over the dough. Note: The dough can be a little sticky to the touch.

Lift the dough with a fork and place onto the parchment paper. You should leave about 2 inches between the cookies.

You can add Valentine’s Candy Sprinkles. This step is optional.

Bake for 15 minutes or until the edges are firm.

Note: Your kitchen will smell amazing while these cookies are baking.

Allow the cookies to completely cool on the cookie sheet.

ENJOY! This recipe will yield approximately 18-24 cookies depending on the size cookie scoop you use. My batch with a medium cookie scoop made 18.

How long will these cookies last? They will last up to four days at room temperature.

What about freezing the cookies? You can freeze these cookies in a freezer-safe Ziploc bag. They will keep up to two months in the freezer.
